Cauliflower Snacks

Ingredients

1 large cauliflower

1/2tsp turmeric

1tsp red paprika

3 eggs

6 spring onions, chopped

large bunch of coriander

5tbs breadcrumbs

1 lime

salt and pepper to taste

Method

Chop the cauliflower in florets and place in a saucepan, covered with cold water and 1 tsp of salt.

bring to the boil and cook for 15-20 min till soft.

Drain and cool.

Mash in bowl with fork and turmeric, red paprika, eggs, chopped spring onions, coriander, breadcrumbs, zest of lime, salt and pepper to taste.

Mix all very well.

Preheat the oven to 180C.

Line a large sheet with baking parchment and shape small balls/patties from your mixture.

Bake in the oven for 25-30min till golden brown.

Serve hot or cold.

Tips:

If the mixture is too wet, you can add extra breadcrumbs
